Tender Lamb Chops with a Kick
This lamb chops recipe combines onion, ginger, garlic, and spices for a flavorful dish. Soak and blanch the lamb chops, then stir-fry with aromatics before simmering in a broth for about an hour. Season to taste and garnish with fresh coriander.
Ingredients:
• Onion
• Ginger
• Garlic
• Star anise
• Peppercorns
• Bay leaves
• Dried chili peppers
• Rock sugar
• Coriander
• Bean paste
• Lamb chops
Instructions:
1. Wash the lamb chops and soak them for 30 minutes to remove blood. In cold water, add onion, ginger, and cooking wine. Blanch the lamb chops, boil them, skim off the foam, drain, and set aside.
2. Heat oil in a pan, add onion, ginger, garlic, dried chili peppers, star anise, peppercorns, bay leaves, rock sugar, and 1 spoon of bean paste. Stir-fry until fragrant. Add lamb chops and stir-fry evenly. Then add 2 spoons of cooking wine, 3 spoons of light soy sauce, and 1 spoon of dark soy sauce. Stir-fry well, add enough water, bring to a boil, and simmer on low heat for about 50 minutes.
3. When the soup thickens, sprinkle a little salt for flavor. Simmer for another 15 minutes. Before serving, sprinkle fresh coriander for aroma.
Tips:
1. Soaking Lamb Chops: Make sure to soak the lamb chops long enough to remove excess blood, which helps improve the flavor and tenderness.
2. Adjust Spice Level: If you prefer a milder dish, reduce the amount of dried chili peppers and peppercorns.
3. Monitor Cooking Time: Keep an eye on the simmering process; if the liquid reduces too much, add more water to prevent burning.
4. Taste as You Go: Taste the broth while cooking to adjust seasoning according to your preference. Add salt gradually to avoid oversalting.
