Delicious Northeastern old-fashioned sticky mala tang

Ingredients:

  • 300 grams of cold noodles
  • 300 grams of beef tendon noodles
  • 6-9 cilantro (large roots)
  • 10 pieces of lettuce
  • 8-10 fungus
  • 2 sheets of dried tofu (bean skin)
  • 10 bean sprouts
  • Aged vinegar is added according to taste

Instructions:

Step 1: Soak the Noodles
Wash the beef tendon noodles and soak them in water for 1 hour. Also, wash the cold noodles and soak them for 30 minutes. (Note: No photo for this step!)

Step 2: Prepare the Greens

Wash the lettuce and cilantro, then set them aside. Don’t hesitate to add your favorite greens!

Step 3: Prep the Bean Sprouts and Tofu

Wash the bean skin and bean sprouts and cut them into strips for later use.

Step 4: Soak the Fungus

Soak the black fungus in water and set it aside.

Step 5: Boil the Noodles

In a hot pot, bring water to a boil. Add the soaked beef tendon and cold noodles first. Stir gently with chopsticks to prevent sticking. When the noodles are about 70-80% cooked, add the black fungus, followed by the tofu.

Step 6: Add Fresh Ingredients

Once the noodles are about 90% cooked, stir in the cilantro and lettuce. Cook for a moment over high heat before turning off the heat.

Step 7: Combine and Serve

In a bowl, mix your spicy hot pot seasoning package. Add the cooked noodles and vegetables, adjusting with vinegar and sugar to taste. Enjoy your meal!

Tips:

1. Ingredient Freshness: Make sure to use fresh ingredients for the best flavor. Fresh greens and noodles will enhance the dish significantly.

2. Adjusting Spiciness: If you’re not accustomed to spicy foods, start with less seasoning and adjust to your taste. You can always add more!

3. Cooking Time: Be careful not to overcook the noodles. They should be slightly firm (al dente) when you turn off the heat, as they will continue to cook in the hot broth.

4. Experiment with Vegetables: Feel free to add other vegetables you like, such as mushrooms or bell peppers, to make the dish your own.

5. Serve Hot: Enjoy your hot pot while it’s warm for the best experience!

6. Pair with Dipping Sauce: Consider serving with a dipping sauce made from vinegar and your favorite spices to enhance the flavor even more.
