How to Make Mala Hot Pot Meatballs at Home
Some people like to eat meatballs, but grilled meatballs are monotonous. For example, lionhead meatballs are good to eat once, but you will get tired of eating them a few times. Today, let’s make a different spicy hot pot meatball.
Ingredients
- Buy as many meatballs as you want
- A handful of enoki mushrooms (side dishes can be replaced)
- One piece of king oyster mushroom (side dishes can be replaced)
- One handful of lettuce (side dishes can be replaced)
- 1-2 spoons of Pixian bean paste
- 1 spoon of light soy sauce
- Half a spoon of dark soy sauce
- Half a spoon of oyster sauce
- 1 small piece of ginger
- 5 cloves of garlic
- 2 red peppers (optional)
- 2-3 cilantro (optional)
- Oil to taste
Recipe Steps
1. Prepare Ingredients: Chop or slice ginger and garlic, cut chili and coriander into sections (omit onion if preferred).
2. Prepare Meatballs: Cut long strips or slices of meatballs into smaller pieces as needed.
3. Prepare Lettuce: Wash the lettuce and place it in a soup bowl as a base.
4. Prepare Mushrooms: Break and wash enoki mushrooms, then slice king oyster mushrooms for later.
5. Blanch Mushrooms: Bring water to a boil in a pot, blanch the king oyster and enoki mushrooms for 30 seconds to 1 minute, then remove.
6. Cook Meatballs: Boil meatballs in the same water for about 2 minutes, then remove and keep the broth.
7. Stir-fry Aromatics: Heat oil in a pot, then add ginger, garlic, chili, and bean paste, and stir-fry (omit bean paste if you prefer less spice).
8. Combine Ingredients: Pour in the meatballs and reserved broth. Add seasonings: 1 tablespoon of light soy sauce, 0.5 tablespoon of dark soy sauce, and 0.5 tablespoon of oyster sauce with king oyster and enoki mushrooms.
9. Simmer: Cook for 1-2 minutes.
10. Serve: Dish out the meal.
11. Final Touch: Add cilantro on top (optional).
Tips:
1. Salt: Don’t add salt; the bean paste is salty, and the light soy sauce adds flavor. If avoiding spice, omit bean paste but adjust with a little salt if needed.
2. For Convenience: If you prefer an easier option, use a hot pot base, boil water, and add meatballs and assorted side dishes.
3. Vegetable Options: Feel free to replace side dishes with any vegetables you like.
4. Less Soup: If preferred, use less water, salt, or bean paste to reduce saltiness; the recipe yields about 2 bowls of soup.
5. Cooking Meatballs: Meatballs cook quickly; keep an eye on them for even cooking.
6. Other Meats: Consider adding other meats like beef rolls or lamb rolls, similar to what you would find in a spicy hot pot. Just remember to adjust blanching or cooking times.
