Spicy Cold Lotus Root Salad
This refreshing and flavorful salad combines crisp lotus root, tender wood ear mushrooms, and crunchy cucumber with a bold, spicy-sour dressing. Infused with garlic, chili, soy sauce, and vinegar, it's a perfect balance of heat and tang. Quick and easy to prepare, this dish makes a great appetizer or side for any meal!

Ingredients:
- 1 lotus root, thinly sliced
- 1/2 cup wood ear mushrooms, rehydrated and cleaned
- 1/2 cucumber, julienned
- 2 cloves garlic, minced
- 2 small chili peppers (Xiaomila or Thai chili), finely chopped
- 2 tbsp soy sauce
- 2 tbsp black vinegar
- 1 tbsp oyster sauce
- 1 tsp sesame seeds
- 1 tsp sesame oil
Instructions:
Blanch the Lotus Root & Mushrooms
- Bring a pot of water to a boil. Add the lotus root slices and wood ear mushrooms.
- Blanch for about 2 minutes, then immediately transfer them to a bowl of cold water to cool down.
- Prepare the Sauce
- In a small bowl, mix the minced garlic, chopped chili peppers, soy sauce, black vinegar, oyster sauce, sesame seeds, and sesame oil. Stir well.
Assemble the Salad
- Drain the lotus root and mushrooms, then place them in a serving bowl.
- Add the julienned cucumber.
- Pour the sauce over the ingredients and gently toss to combine.
- Serve & Enjoy
