• 4 catties salad oil

• 50 g green onion

• 50 g ginger

• 50 g garlic

Spices:

• 25 g Sichuan pepper

• 25 g cumin

• 10 g star anise

• 10 g bay leaves

• 8 g cardamom

• 9 g amomum

• 10 g fennel

• 6 g allspice

• 5 g nutmeg

• 3 g ginger

• 6 g cinnamon

• 5 g gardenia

• 6 g galangal

• 2 g cloves

Instructions:

1. Heat the oil over medium-low heat, add the green onion, ginger, and garlic, frying until golden. Remove them.

2. Add the processed spices and fry for 2-3 minutes. Turn off the heat and let the oil soak for 12 hours before using.

• 100 g shallots

• 100 g ginger

• 100 g garlic

• 500 g chili (soaked and chopped)

• 3 catties Pixian bean paste

• 80 g rock sugar

• 280 g Lao Gan Ma flavored fermented black beans

Spices:

• 10 g galangal

• 30 g star anise

• 28 g cinnamon

• 30 g fennel

• 25 g bay leaves

• 14 g cardamom

• 5 g coriander seeds

• 5 g caicao

• 5 g lingcao

• 15 g fragrant sand

• 12 g fragrant fruit

• 5 g tangerine peel

Instructions:

1. Heat the oil in a pot, add scallions, ginger, and garlic until yellow.

2. Add peppercorns, chopped chili, Pixian bean paste, black beans, and rock sugar. Simmer until the sauce thickens.

3. Use store-bought hot pot sauce for convenience, if desired.

4. For stir-frying, blanch vegetables, then add hot pot sauce, oil, and ingredients, seasoning with sugar and MSG before serving!
