• Rinse live crayfish with clean water twice. Add 2 spoons of salt and cover with water, soaking for 2 hours. Rinse repeatedly, scrub the body, remove whiskers, and pull out the intestines. Drain well.

• Heat a pan with cold oil. Sauté dried chilies, then add chopped ginger, garlic, and chili pepper.

• Mix in soybean paste and bean paste. Stir-fry until fragrant, then add the crayfish. Stir-fry until the shells turn red and the bodies curl. Add dried chilies, cinnamon, bay leaves, aniseed, and peppercorns, stirring until fragrant.
