This Tianshui Gangu Chili Noodles recipe involves making a flavorful chili oil. Gather fresh ingredients like ginger, onion, and coriander, and mix with Gangu chili powder and spices. Heat oil, sauté aromatics, and combine for a rich, fragrant oil to enhance your hot pot.
Thanks to the careful instruction of Grandma Tianshui, half of the process is done once the chili oil is ready, half of the process is done.

Ingredients Preparation
1. Prepare the Ingredients: Gather and wash all necessary ingredients for the hot pot.
2. Chili Mixture: Combine Gangu chili powder with appropriate salt in a container and set aside.
3. Gather Spices: Prepare the following spices and aromatics:
• Star anise
• Peppercorns
• Cinnamon
• Bay leaves
• Grass fruit
• Nutmeg
• Onion slices
• Ginger slices
• Cumin
• Cloves
4. Garnish Preparation: Chop shallots and fresh coriander to garnish during serving.
Cooking Process
1. Heat the Oil: Heat the oil over medium heat in a pan and then set aside for later use.
2. Add Aromatics: Once the oil is preheated, add the chopped onions and coriander, sautéing until they are fragrant.
3. Incorporate Spices: Add the chili mixture and the prepared spices from step 3 into the pan.
4. Fry Until Golden: Stir-fry the mixture until golden brown, then remove it from heat.
5. Adjust Oil Temperature: Allow the oil temperature to drop to about 60% hot before proceeding.
6. Add Prepared Chili: Slowly add the prepared chili to the oil, stirring to allow it to adapt to the temperature and enhance its aroma.
7. Visual Check: After the first stir-fry, your mixture should resemble the desired appearance (as shown in your reference image).
8. Incorporate Sesame Seeds: Add the prepared, cooked seeds and stir-fry everything evenly at this stage.
9. Increase Heat: Raise the heat for a second fry. Make sure the oil is hot before pouring it in. Add vinegar and white wine as well.
10. Wait to Cool: To avoid bitterness, allow the oil to cool slightly before adding the white wine.
11. Final Oil Addition: After adding vinegar and white wine, pour more oil to finish the mixture.

2. Taste: Before serving, taste the mixture to adjust the seasoning according to your preference.
3. Final Stir: Use chopsticks to stir the mixture to combine all flavors thoroughly and gently.
