• 8g Cinnamon

• 10g Star Anise

• 8g Bay Leaf

• 9g Fennel

• 10g Thyme

• 8g Angelica

• 9g Galangal

• 5g White Cardamom

• 7g Tsaoko

• 9g Ginger

2. 50g Chopped Black Bean Sauce

3. 150g Dried Chili (cut into sections)

5. 50g Rock Sugar

6. 100g Ginger (sliced)

7. 100g Garlic (sliced)

8. 1 Onion (shredded)

9. 2 Celery (cut into sections)

10. 2 Coriander (cut into sections)

Broth Recipe

• 2 lbs Beef Bones

• 2 lbs Pork Leg Bones

• 30 lbs Water

• 80g Ginger

• 80g Garlic

Boiling Steps:

1. Wash bones and boil for 3 minutes to remove impurities, then rinse.

2. Boil bones with water, ginger, and garlic for 2-4 hours on low heat until the broth is rich and white. Remove residue for pure broth.

Prepare the Soup Base

Combine 5000g stock, 200g base sauce, 30g salt, and 30g chicken stock. Cook on low heat for 10 minutes to meld flavors. Enjoy your Malatang!
