Tender Braised Pork with Soy and Ginger
This recipe for braised pork belly includes searing sliced pork belly, then simmering it with crystal sugar, spices, rice wine, and soy sauces until tender. It’s finished by adjusting the flavor and thickening the sauce, then garnished with sesame seeds before serving.
Ingredients:
• 700g pork belly with skin
• 10 small pieces of crystal sugar
• 4 slices of ginger
• 1-2 star anise (optional)
• 2-3 bay leaves (optional)
• 1 dried chili (optional)
• 2 tablespoons rice wine
• 2 tablespoons dark soy sauce
• 2 tablespoons light soy sauce
• Boiling water (enough to cover the meat)
Instructions:
1. Prepare Ingredients: Thaw and cut the pork belly into mahjong-sized pieces. Slice ginger and prepare spices.
2. Clean Pork Belly: Wash the pork belly thoroughly until no blood remains, then dry with kitchen paper.
3. Sear the Pork: In a heated pot (no oil), place the pork belly in a single layer. Cook on low heat until it browns and releases fat.
4. Add Sugar and Spices: Once browned, add crystal sugar and stir-fry until melted. Incorporate ginger, star anise, bay leaves, and optionally dried chili.
5. Add Liquids: Pour in rice wine, dark soy sauce, and light soy sauce. Stir well until meat is coated.
6. Stew the Pork: Cover with boiling water. Bring to a boil, then simmer on low heat for 40 minutes to 1 hour, adding boiling water as needed.
7. Final Adjustments: Taste for saltiness and adjust if necessary. Uncover and raise the heat to thicken the sauce, stirring to avoid burning.
8. Serve: Garnish with sesame seeds and enjoy!
