Ingredients:
• Pig’s trotters
• Soybeans (soaked overnight)
• Ginger slices
• Scallion
• Cooking wine

Instructions:
1. Blanch the Pig’s Trotters: In a pot, add cold water, scallion, ginger slices, and cooking wine. Blanch the trotters, skim off any foam, then wash them for later use.
