Xiamen Style Homemade Shacha Noodles

Instructions:
1. Prepare Tofu: Cut the tofu into triangles and marinate with a little salt. Coat both sides with flour.
2. Fry Tofu: Heat oil in a pan and fry the coated tofu until golden brown on both sides. Remove and set aside.
3. Prepare Ingredients: Cut the squid and egg sausage, then set them aside.
4. Sauté Aromatics: In the same pan, add garlic and chili sauce. Stir-fry briefly until fragrant.
5. Make the Broth: Add water and bring to a boil. Stir in peanut butter until dissolved.
6. Add Tofu and Meat: Once boiling, add the fried tofu, meatballs, and fish tofu. Reduce to low heat. Season with appropriate salt and sugar, and simmer for about 20 minutes until the soup thickens.
7. Incorporate Egg Sausage: Add the egg sausage and stir, then sprinkle in chicken essence.
8. Fry Sausage: In a separate pan, fry the sausage until golden brown, then add it to the soup.
9. Blanch Vegetables and Noodles: Blanch the bean sprouts in boiling water and place them in a bowl. Do the same with the squid, adding a bit of minced garlic. Blanch the noodles for a few minutes, then set aside.
10. Assemble the Dish: Turn off the heat and pour the soup and all ingredients directly over the noodles and bean sprouts in the bowl.
