A Mala Tang That Outshines Yang Guofu’s

Sometimes, you will buy a pack of instant noodles in a hurry. Do you want to eat a bowl of different instant noodles? Today, make a spicy meatball instant noodles with a hot pot base. Follow my steps and start right away.

Materials

Hotpot BaseOne block
Pixian bean paste1 tsp
milkOne bag
waterTwice the amount of milk 
Onion, ginger and garlic (for sautéing)Tahini
ModerateVarious vegetables, meatballs, hot pot noodles
Salt, spicy chicken, oyster sauce, vinegar (for seasoning) 

Steps to make Yang Guofu's spicy hot pot 

Step 1: Prepare the Vegetable Balls

Wash the vegetable balls and dilute the sesame paste with warm water.


Step 2: Chop the Aromatics

One shallot, three or four slices of ginger, one or two cloves of garlic,


Step 3: Sauté the Aromatics

Put a little oil in the pan, add onion, ginger, garlic, and sauté until fragrant.


Step 4: Add Flavor Base

Turn to low heat, add a small spoonful of bean paste and a piece of hot pot base.


Step 5: Fry Until the Oil Turns Red

Fry until the oil turns red. If the fire is too high, the oil will easily splash everywhere. Turn to the lowest fire and fry slowly. You can also use your left hand to cover the pot while frying.


Step 6: Create the Broth

Add a pack of milk and about twice the amount of water, then add salt, chicken essence, MSG, and oyster sauce to taste and adjust the amount.


Step 7: Boil and Remove Solids

After boiling, remove the lid and cook for another minute (adding milk and then covering the lid will cause it to overflow). Use a slotted spoon to scoop out the onions, ginger, garlic, and large pieces of chili pepper.


Step 8: Add Noodles and Meatballs

First, cook the noodles, meatballs, instant noodles, etc., that need to be better cooked.

Step 10: Prepare the Sauce

  • Before serving, mix two tablespoons of diluted sesame paste with a bit of vinegar.
  • Combine this with the soy sauce, vinegar, and oyster sauce mix:
  • 2 tablespoons sesame paste
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 0.5 tablespoon oyster sauce
  • Stir well and pour over in the pot before serving.

Remember to use about a quarter of the small hot pot base to avoid it being overly spicy. Enjoy your meal!

The two of them finished the meal quickly. The soup was thick enough, with the addition of milk, not spicy, and could be drunk directly.

This is the hot pot base. The small hot pot base mentioned above should be used for about a quarter. If you put too much in it, it will be spicy. 


Tips to beat Yang Guofu's mala tang

1. The ratio of milk to water is 1:2, which is an approximate ratio. If you have a lot of things to cook, you can add more water.

2. Thaw meatballs and other items in advance, then cook the challenging ones first, followed by the vegetables. 

3. After adding milk, the mixture can easily overflow after boiling. To prevent overflow, stagger the lid a little or keep an eye on it the whole time after adding the meatballs. 

4. The dipping sauce includes sesame, vinegar, pepper oil, and chopped coriander.
