Savoring the Crunch: Potato and Lotus Root Mala Xiangguo

Today, I make a spicy hot pot using potato slices, lotus root slices, black fungus, and tofu. The authentic Fushun spicy hot pot does not contain sesame sauce. The methods in different places are also different. Here is only the process of making a local spicy hot pot!

Today, I make a spicy hot pot using potato slices, lotus root slices, black fungus, and tofu. The authentic Fushun spicy hot pot does not contain sesame sauce. The methods in different places are also different. Here is only the process of making a local spicy hot pot!

Ingredients:

• Potato slices

• Lotus root slices

• Fungus

• Pak choy

• Rapeseed

• Chrysanthemum

• Fried tofu

• Vegetarian chicken

• Kelp shreds

• Fish tofu

• Tanbu La

• Conch balls and other meatballs

Steps:

1. Boil Ingredients: Cook meatballs, lotus root slices, potato slices, and fungus for 5 minutes. Boil vegetables for 2-3 minutes. Cool potato and lotus root slices in water for extra crispiness.

2. Prepare Sauce: In a bowl, mix:

• 1 teaspoon cumin powder

• 1 teaspoon chicken essence

• 1 teaspoon MSG

• 1 teaspoon mashed garlic

• 0.5 teaspoon salt

• 1 tablespoon crushed peanuts

• 1 tablespoon soy sauce

• 1 tablespoon sesame oil

• 2 tablespoons vinegar

• 2 tablespoons sugar

• 5 tablespoons chili oil

• 1 teaspoon each of 13 spices, Fengqiu brand chicken powder, and spicy seasoning

• Chopped green onion and coriander to taste

3. Mix: Combine the sauce with the cooked ingredients, allowing a bit of water to remain but not too much.

Tips:

• This recipe yields a sweet and sour taste. Adjust the seasoning based on the number of ingredients. Customize the flavors using vinegar, sugar, sesame oil, and chili oil according to your preferences.

• Note: 1 tablespoon ≈ 15ml, 1 teaspoon ≈ 5ml.
