Haidilao Taiwanese Mala Hot Pot
This Taiwanese hot pot recipe serves four and features a rich and spicy flavor profile. The main ingredients include a Haidilao soup base, various vegetables (including Chinese cabbage and Qingjiang vegetables), frozen tofu, yuba, dumplings, and beef.
Ingredients:
• Haidilao soup base
• Half a head of Chinese cabbage
• 1 small piece of cabbage
• 1 small handful of Qingjiang vegetables
• 1 pack of frozen tofu
• 1 pack of yuba
• 1 package of fish dumplings
• 1 pack of swallow dumplings
• 1 pack of tribute pills
• 1 pack of beef (5 flowers)
Cooking Steps:
1. Wash the green vegetables and set aside. In a pot, add the soup base and 1500cc of water, then bring it to a boil. Add the green vegetables once boiling.
2. Add the frozen tofu, yuba, bean skin, fish dumplings, swallow dumplings, and beef belly to the pot. Cook until everything is heated through, resulting in a flavorful spicy hot pot.
Tips:
1. Ingredient Preparation: Wash all vegetables thoroughly to remove any dirt or pesticides; chop them as needed.
2. Water Measurement: Ensure that you accurately measure 1500cc of water to achieve the right soup consistency and flavor.
3. Boiling Point: Allow the soup base to fully boil before adding the vegetables, as this helps retain their nutrients and texture.
4. Cooking Order: Add ingredients in a logical sequence; start with vegetables that require longer cooking times, followed by tofu and dumplings, to ensure even cooking.
5. Monitoring Cooking: Keep a close eye while cooking to prevent overcooking the dumplings, which can cause them to burst.
6. Flavor Development: Taste the broth after adding all ingredients; adjust the seasoning if necessary to enhance flavor before serving.
