Spicy Squid with Ginger and Coriander
This spicy squid dish features tender strips sautéed with garlic, ginger, and dried chili, enhanced by white pepper and peppercorn oil. Finished with fresh coriander, it’s a quick and flavorful seafood delight.
Ingredients:
• Squid (as needed)
• Fresh coriander (as needed)
• White pepper (to taste)
• Peppercorn oil (to taste)
• Dried chili (to taste)
• Garlic (minced, as needed)
• Ginger slices (as needed)
• Salt (to taste)
Instructions:
1. Prepare the ingredients: clean the squid and coriander, then cut the squid into strips. Blanch the squid in hot water briefly—ensure not to overcook, or it will become tough.
2. Heat oil in a pan, then add ginger slices, minced garlic, and a handful of peppercorns. Stir-fry until fragrant. Add the blanched squid strips, followed by a small spoonful of white pepper powder and a splash of soy sauce. Stir to combine.
3. Season with a small amount of salt, sugar, and a spoonful of peppercorn oil. You may also add MSG or chicken essence for extra flavor. Stir-fry to mix well.
4. Add the coriander segments, then turn off the heat. Stir-fry for an additional ten seconds before serving.
Tips:
1. White pepper and Sichuan pepper oil are key flavor components.
2. Avoid leaving coriander in the pan for too long to preserve its freshness.
3. Cook everything quickly to prevent overcooking the squid or other similar seafood.
