• 120g hot pot base
• 1 tablespoon salt
• 1 scallion (chopped)
• 1 head of garlic (minced)

Instructions:
1. Prepare the Lamb Chops: Cut the lamb chops into small pieces and rinse them with cold water.
2. Blanch the Lamb: In a pot of cold water, add the lamb chops, cooking wine, peppercorns, and star anise. Bring to a boil and blanch for 10 minutes, turning the chops several times during the process.
3. Drain the Lamb: Transfer the blanched lamb chops to a basin and drain any excess water.
4. Sauté Aromatics: Heat oil in a pot over low heat. Add the peppercorns, fennel, scallion, and garlic, stir-frying until fragrant.
5. Add Hot Pot Base: Incorporate the hot pot base into the pot and stir-fry until aromatic.
6. Cook the Lamb Chops: Add the lamb chops to the pot, stir-frying for about five minutes on low heat. Then pour in the beer and enough hot water to cover the meat. Season with salt, soy sauce, and sugar, and let it stew.
